    A favourite Winter soup which is vegetarian. Artichokes will discolour when peeled so place them into a bowl of cold water with a slice of lemon added to prevent them from discolouring.

    An easy shortbread based lemon and lime tart which is equally delicious served with a cup of tea at tea time or with a dollop of fresh cream as a dessert. Cuts into 18 pieces or 32 small fingers as in the image.

    Lemon Barley Water

    I've been making lemon barley water for years and it's always been a big hit with visitors at our house. Measurements do not need to be exact, some lemons yield more juice and are sweeter than others. Make according to your own taste and dilute further if you prefer. It's delicious served over ice on a hot day. Use unwaxed fruit and if you can't find unwaxed lemons scrub under running water before use.

    Malted Fruit and Honey Loaf

    From my Second Chalice Recipe book, written and published by myself in order to share favourite recipes with my restaurant customers in 1987. This is a quick and easy malt loaf made without yeast. It's made with honey, has no added sugar and is also fat free. Use any dried fruit in place of the dates. Serve sliced with butter.

    A traditonal spiced Moroccan lamb stew. Shoulder is the best cut to use and cooking on the bone is preferable as you will get a deeper and richer flavour to the stew. Serve with steamed cous cous or buttery mashed potato.

    Mussels are usually a good and affordable buy for a weekday supper dish. Peak season is from October through to March. Imagine you are in Belgium or France and serve with crusty bread or a side order of frites. Experiment by using cider instead of wine and creme fraiche instead of double cream.

    This is an adapted recipe from The Vegetarian Epicure by Anna Thomas and a real favourite from my vegetarian restaurant days. Delicious on toast or with garlic bread this recipe can also suit vegans if you replace the butter for more oil and check that the mustard that you use does not contain honey or other non-vegan ingredient.

    Such an easy way to use leftover over pitta breads or to make to go with dips at a party. These pitta bread crisps will keep in an airtight container for at least a week, if not longer.

    Quinces are high in pectin so this jelly sets easily. Sometimes I add a little rose water to make an extra fragrant Middle Eastern style jelly.

    Ricotta doughnuts

    Ricotta doughnuts

    Moreish and quick to make, these delicious little ricotta doughnuts are perfect with a morning coffee or served as a dessert, with a dipping sauce of fresh fruit puree or chocolate. (Cooked and sieved sweetened blackcurrants are my favourite.) There is no need to use a deep fat fryer to cook the doughnuts if you don't have one. Shallow oil, about 2/3cm in the bottom of a heavy based frying pan works very well. You will just need to turn them more often.

    Roasted Squash and Blue Cheese Pizza

    The sweet flesh of squash and pumpkin works so well with blue cheese of any type. Perhaps not strictly a pizza but delicious. Use crusty bread for bases if you don't have time to make a dough. Try different cheese to replace the goats cheese. Experiment!
